Egg Curry with Coconut Milk

This is another add on from my childhood favorites. Not exactly the same but the similar curry used to be the combination for Pathiri in our house. This goes well with idiyappam, chappathi, pathiri, bread and even with some tasty ghee rice.     
Ingredients:             
Eggs                                         4
Onions                                     2
Ginger                                     Small piece
Green Chilly                           2
Tomato                                   1
Potato                                     1
Turmeric Powder                    ¼ tsp
Red Chilly Powder                 2 tsp
Coriander Powder                  1 tsp
Fennel Seeds                          1 tsp
Coconut Milk Powder            2 tbsp
Curry Leaves
Coconut Oil
Salt
Method:
1. Boil the eggs and keep aside.
2. In a pan, heat coconut oil and add fennel seeds.
3. Add sliced onions, green chili, ginger, salt and curry leaves to this.
4. Saute until light brown and add turmeric, coriander and red chilly powder.
5. Saute this until the raw smell goes off.
6. Now add sliced tomato and ½ cup water and saute until tomatoes are well done.
7. Add chopped potatoes to this and cover cook until potatoes are done.
8. Now add 1 cup of coconut milk. I used coconut milk powder but if you have fresh coconut, you can extract the milk.
9. Boil this for around 5 mins and add the boiled eggs to this. I have cut the eggs into half as I like it better that way.
10. Open and cook for 5 mins, off the flame and serve hot.

Shakshuka

Shakshuka is a combination of eggs, tomatoes, spices and is a famous Middle Eastern dish. 

Ingredients:
Eggs                                   6
Onion                                 1
Garlic                                 2 cloves
Capsicum                           1 big
Tomato                               3
Cumin powder                   1/2 tsp                           
Ground Coriander              1/2 tsp
Ground Black Pepper        1 tsp
Ketchup                             1/4 cup
Salt

Method:
1. In a pan heat olive oil and add chopped onions, garlic, chopped capsicum, ground coriander, cumin powder, ground black pepper and salt.
2. Saute until the onion is soft.
3. Add chopped tomatoes and 1/4 ketchup.
4. Keep this on sim for 10 mins.
5. Make small gaps in between and add the eggs.
6. Close and cook until eggs are done.
7. Add chopped corianders or parsley on top. Done! :)

Egg Roast.....!!!

Waiting for a spicy, tangy dinner?? Here you go...!!!
Preparation Time : 10 mins
Cooking Time : 20 mins
Serves : 2

Ingredients:
Eggs
4
Onions
3
Ginger
1
Garlic
4 cloves
Green chilly
2
Tomato
1
Turmeric Powder
½ tsp
Coriander Powder
1 tsp
Red chilly powder
1 tsp
Pepper Powder
1 tsp
Fennel seed
1 tsp
Coriander leaves

Curry Leaves

Salt

Oil

Method:
1. Boil and cook the eggs, peel the shell and keep aside.
2. Heat oil in a pan and add fennel seeds.
3. Add sliced onions and salt and saute until light brown.
4. Now add chopped ginger, garlic and green chilly and saute well.
5. Add turmeric powder, coriander powder, red chilly powder, pepper powder and mix well.
6. Once the spices are done, add tomato and saute until soft.
7. Then add the boiled eggs to this and mix and close and cook for 5 mins.
8. When done, off the flame, add coriander and curry leaves and serve hot with chapattis :)

Egg Puffs.....!!!

Usually we buy puffs from bakeries. But have you ever tried it at home?? If not do try!! It tastes awesome and requires less time for cooking too! 



Preparation Time : 15 mins 
Baking Time : 20 - 30 mins
Serves : 10

Ingredients:
Egg
6
Puff Pastry sheets
10
Onions
3
Ginger (chopped)
1 tbsp
Garlic (chopped)
1 tbsp
Kashmiri Chilly Powder
1 tsp
Pepper Powder
1 tsp
Garam Masala
½ tsp
Turmeric Powder
½ tsp
Tomato Ketchup
1 - 2 tbsp
Curry Leaves

Salt 

Oil


Method:
1. Boil 5 eggs completely and keep aside.
2. Preheat the oven for 10 mins at 180⁰C.
3. Mean while, heat oil in a pan and add sliced onion, chopped ginger and garlic and curry leaves and salt.


4. Saute this until the onion turns golden brown.
5. Now add kashmiri chilly powder, turmeric powder, pepper powder and garam masala and saute well until the raw smell goes off. 
6. Add tomato ketchup into this and mix and off the flame.
7. Now layer the baking tin with parchment paper.
8. Beat one egg in a small bowl.
9. Now in each pastry keep 1 tbsp of masala and half of one boiled egg and fold it.
10. Above this brush the beaten egg.
11. Continue this until the pastries are over.
12. Bake this in the middle rack for 20 - 30 mins until golden brown as in the picture. Tasty home made puffs ready :) :)

Egg Burji.....!!!

Yet another easy recipe for dinner!! Usually when we think of making something with egg we end up in roast or curry.. This is a different one for those who are awaiting for a simple but yummy egg dish!! Here you go...!!
Preparation Time : 10 mins
Cooking Time : 10 mins
Serves : 4

Ingredients:
Eggs
6
Onion
Tomato
1
Green Chilly
2
Coriander leaves

Oil 

Salt


(Ingredients for crushed masala)
Chilly Powder
1½ tsp
Coriander Powder
1½ tsp
Turmeric Powder
½ tsp
Jeera powder
¼ tsp
Garlic
3 cloves
Onion
1
Pepper balls
½ tsp
Grated coconut
1 cup
Garam masala
1½ tsp

Method:
1. In a grinder, mix all the ingredients for crushed masala and add 1/2 cup of water and grind into a fine paste and keep aside.
2.Heat oil in a pan and saute chopped onion and green chilies.
3. Now add tomato in to this and saute well.
4. Now add the beaten eggs in to this and the masala paste and salt.
5. Keep stirring this until the oil clears and you find the egg as in the photo.
6. Once done, add chopped coriander leaves and curry leaves and serve hot :)

Egg Curry.......!!!

Here is a very easy and simple recipe for egg lovers.....
Preparation Time : 10 mins
Cooking Time : 10 - 15 mins
Serves : 2 - 3

Ingredients:
Eggs
4
Onion
1
Garlic
4 cloves
Ginger
a small piece
Green chilly
2 - 3
Tomato
1
Turmeric Powder
3/4 tsp
Red Chilly Powder
1/2 tsp
Fennel Seeds
1 tsp
Coconut Milk
1 cup
 Curry Leaves
 Salt
 Oil


Method:
1. Heat oil in a pan and sputter the fennel seeds.
2. Add onion and saute well.
3. Add the finely chopped ginger garlic and green chilly.
4. Saute well. Once the raw smell goes off, add turmeric and red chilly powder.
5. Saute this for about 2 mins. Add the tomatoes and saute until soft.
6. Now add the eggs one by one. (eggs must not be beaten).
7. Cover and cook this for about 10 mins.
8. Once the eggs are cooked completely, add coconut milk and bring to boil.
9. Throw some curry leaves above the curry.
10. Serve hot with chapattis or khubus.....!!! :) :)
