Sukhiyan......!!! (Green gram fritters)

This is a common snack in mid Kerala..... There is no special occasion that we make this but usually made with an evening tea....

Preparation Time : 20 mins
Cooking Time : 20 mins
Makes : 25 pcs

Ingredients:
Green Gram
1 cup
Jaggery
4 cubes
Grated Coconut
1 cup
Water
1 cup
All purpose flour
1 cup
Salt

Oil


Method:
1. Cook the green gram with water in a pressure cooker for about 10 mins.
2. Meanwhile, melt the jaggery cubes with little water in a pan.
3. Once the green gram is done, pour the jaggery syrup over it through a sieve. 
4. Add the grated coconut and mix well.
5. Now make small balls out of this mixture and set aside. I got around 25 balls from this.
6. Now, mix all purpose flour, salt and water in a bowl.
7. Dip each balls in the flour mixture and cover it with the mix.
8. Heat oil in a pan and drop each dipped balls and fry until golden brown.
9. Tasty sukhiyans are ready to enjoy :) :)

Pepper Chicken.......!!!!

This is a spicy but yummy curry.... This can be made in a thick gravy or even in a dry form!
Preparation Time : 10 mins
Cooking Time : 20 mins
Serves : 2 - 4

Ingredients:
Chicken
1 kg
Onions
2
Ginger
1 pc
Garlic
4 cloves
Green chilly
2
Tomato
1
Turmeric Powder
1/2 tsp
Coriander Powder
1 tbsp
Pepper Powder
2 - 3 tbsp
Lime
2 tbsp
Curry Leaves

Salt 

Oil

Method:
1. Marinate the chicken for half n hour with 1 tbsp pepper powder, lime and salt.
2. Heat oil in a pan and saute onions until soft.
3. Add chopped ginger,garlic and split green chilies into this and saute well until the raw smell goes off.
4. Once done, add turmeric powder,pepper powder and coriander powder and saute again.
5. Now add sliced tomatoes and saute until they become soft.
6. Now add the cleaned and cut chicken pieces and mix well.
7. Close and cook this until the chicken is done.
8. There will be still gravy in the chicken, so now increase the flame and open the lid.
9. Keep stirring until you reach the desired consistency, keep adding crushed pepper while stirring little by little.
10. If you need it gravy form, off the flame soon after the chicken is done and the gravy is thick enough.
11. Add curry leaves to this.
12. Spicy Pepper Chicken ready to serve....!!! :)

Bourbon Pudding.....!!!

A yummy pudding which has a blend of coffee and chocolate flavors.... This is a no cook, no bake pudding... This is made with bourbon biscuits as the name says it, but this can be made with any other biscuits as well....
Preparation Time : 15 mins
Serves : 8 - 10

Ingredients:
Bourbon Biscuits
2 packets
Puck Cream
2 tins
Dream Whip
5 sachets
Cocoa Powder
2 tbsp
Cold Milk
1/2 l
Vanilla Essence
2 tsp
Warm Coffee
1 cup
Cashews
15
Grated chocolate


Method:
1. Dip the biscuits in warm coffee and layer them in a pudding dish.
2. Spread some chopped cashews above this and refrigerate.
3. Now empty 2 sachets of dream whip powder and combine with 1/2 cup of cold milk and beat until fluffy.
4. Add 1 tin puck cream and 1 tsp vanilla essence to this and beat again.
5. Now spread this above the biscuit layer and refrigerate again.
6. Then again dip and layer the biscuits above the creamy layer and throw some cashews above this.
7. Next, in a bowl empty 3 sachets of dream whip powder and mix with 1/2 cup cold milk and beat well until fluffy.
8. Add 1 tin puck cream and vanilla essence to this and beat again.
9. Add cocoa powder and mix well.
10. Now spread this above the first creamy layer and biscuits.
11. Grate some chocolate above this and keep refrigerated.
12. Pudding ready....!! Serve Chilled :) :)

Nadan Beef Curry (Kerala Style Beef)....!!!

This is a Kerala style spicy beef curry which can be made easily...!!!
 Preparation Time : 10 mins
Cooking Time : 10 mins
Serves : 2 - 3

Ingredients:
Beef
½  kg
Onion
1 big
Ginger
1 pc
Garlic
1 cloves
Green chilly
2
Tomato
1
Turmeric Powder
½ tsp
Red Chilly powder
1 tsp
Coriander powder
1 tsp
Black Pepper
1 tsp
Crushed red chilly
½ tsp
Cardamom
2
Cinnamon stick
1 pc
Cloves
3
Shallots
3-4
Mustard

Curry Leaves 

Method:
1. Powder the spices(black pepper, cardamom, cinnamon stick,cloves) together in a blender.
2. Heat oil in a pressure cooker and fry the powdered spices and turmeric powder, coriander powder and red chilly powder.
3. Add sliced onion to this and saute well.
4. Now add ginger garlic paste, green chilies and saute well.
5. Add tomato, cleaned beef, mix and close the cooker and cook for about 10 - 15 mins until the meat is well cooked.
6. Now if you need to thicken the gravy increase the flame.
7. Now heat oil in another pan and sputter mustard seeds, curry leaves and shallots.
8. Add this to the curry and mix well.
9. Serve hot with rice or rotis.... :) :) 

Dal Curry......!!!

An easy Dal recipe which goes well with rice, chapattis and nan....!
Preparation Time : 10 mins
Cooking Time : 30 mins
Serves : 4

Ingredients :
Toor Dal
½ cup
Onion
1
Garlic
4 cloves
Tomato
1
Green Chilly
2
Turmeric Powder
½ tsp
Red Chilly Powder
1 tsp
Mustard Seeds
1 tsp
Cumin Seeds
½ tsp
Curry Leaves

Coriander Leaves

Salt

Oil


Method:
1. Clean and cook the dal with 2 garlic sliced and salt.
2. Heat oil in a pan and sputter mustard and cumin seeds.
3. Once completely popped, add chopped onion and saute.
4. Add chopped garlic, green chilly and saute again.
5. Now add turmeric powder and red chilly powder and mix well.
6. Once the raw smell goes off add tomato and saute it until soft.
7. Now add this to the cooked dal and mix well.
8. Boil this for a minute and off the flame. Add curry leaves and coriander leaves.
9. Serve hot :) :)

Prawns Masala....!!!

Prawns is my favorite sea food and you can find most of my sea food dishes are with prawns..... They taste really yummy however you cook them.....

Preparation Time : 10 mins
Cooking Time : 15 mins
Serves : 2 - 3

Ingredients:
Prawns
1 kg
Onion
1 big
Shallots
10 - 15
Ginger
1 med piece
Garlic
4 cloves
Green chilly
2
Tomato
Tamarind Pulp
1 tsp
Coconut Milk
½ cup
Turmeric Powder
1 tsp
Coriander Powder
1 tsp
Red chilly powder
½  tsp
Black Pepper powder
½  tsp
Garam Masala
½  tsp
Mustard seed
1 tsp
Fenugreek seeds
a pinch
Curry Leaves

Salt

Oil

Method:
1. Heat oil in a pan. Sputter mustard seeds and fenugreek seeds.
2. Add curry leaves. Now add onions,shallots and salt to this and saute until done.
3. Now add chopped ginger, garlic and green chilies and saute until the raw smell goes off.
4. Add the powdered spices to this and mix well. 
5. Add tomatoes and saute until soft.
6. Once the tomatoes are done, add tamarind pulp and mix well.
7. Now add the cleaned prawns and mix well.
8. Add the coconut milk and combine.
9. Close and cook until the prawns are cooked well. 
10. Now you can increase the flame and stir until the gravy reaches the desired consistency.
11. If you need loose gravy then you stop once the prawns are done.
12. Prawns Masala Ready!!!! :)

Chicken Cutlets.....!!!

These are one of my all time fav snack!! They are pretty easy to make too... You may try this recipe with other meat as well... beef or mutton....
Preparation Time : 20 mins
Cooking Time : 10 mins
Serves : 6 - 8

Ingredients:
Chicken Breast
1 kg
Potato
1 big
Onion
1
Ginger - Garlic paste
1 tbsp
Green chilly
2 - 3
Turmeric powder
1 tsp
Pepper Powder
2 tsp
Eggs
2 - 3
Bread crumbs
1 - 2 cup
 Curry Leaves
 Coriander Leaves
 Salt
 Oil 
Method:
1. Cook the chicken and potato with salt,1/2 tsp turmeric powder and pepper powder.
2. Once its cool, mince the chicken and mash the potatoes and mix them together.
3. Heat oil in a pan and saute onions until soft.
4. Add ginger-garlic paste and green chilies and saute well.
5. Now add turmeric powder, garam masala and pepper powder and mix well.
6. Off the flame. Add this masala into the chicken potato mix and combine it together.
7. Add chopped curry leaves and coriander leaves into this and again mix well.
8. Now beat the eggs and keep the bread crumbs ready.
9. Make small balls out of the chicken and flatten it in your palm.
10. Dip this in the egg and then dust with bread crumbs.
11. Complete the mix by doing this.
12. Now heat oil in a pan and deep fry these until brown. Yummy chicken cutlets are ready.... :) :)

Egg Curry.......!!!

Here is a very easy and simple recipe for egg lovers.....
Preparation Time : 10 mins
Cooking Time : 10 - 15 mins
Serves : 2 - 3

Ingredients:
Eggs
4
Onion
1
Garlic
4 cloves
Ginger
a small piece
Green chilly
2 - 3
Tomato
1
Turmeric Powder
3/4 tsp
Red Chilly Powder
1/2 tsp
Fennel Seeds
1 tsp
Coconut Milk
1 cup
 Curry Leaves
 Salt
 Oil


Method:
1. Heat oil in a pan and sputter the fennel seeds.
2. Add onion and saute well.
3. Add the finely chopped ginger garlic and green chilly.
4. Saute well. Once the raw smell goes off, add turmeric and red chilly powder.
5. Saute this for about 2 mins. Add the tomatoes and saute until soft.
6. Now add the eggs one by one. (eggs must not be beaten).
7. Cover and cook this for about 10 mins.
8. Once the eggs are cooked completely, add coconut milk and bring to boil.
9. Throw some curry leaves above the curry.
10. Serve hot with chapattis or khubus.....!!! :) :)

Umm Ali.....!!!

One of the beautiful and delicious dessert i have ever had..... This is indeed a rich dessert and so i rarely make it at home.... At first like everyone might have, even I had the doubt that how did this dessert got named as Umm Ali? Umm Ali is a traditional Egyptian dessert.There is a story behind it....

Om Ali was the wife of a ruler from the Ayyubid dynasty in Egypt calles Ezz El Din Aybek. Her rival Shagaret El Dorr was the second wife of that ruler. After his death, Shagaret El Dorr arranged for Om Ali to be murdered and to celebrate, she requested from her cooks to come up with the most delicious dessert they can think of to distribute to throughout Egypt. The successful recipe was a special pastry with milk and honey. That was named Om Ali. And this is what we call now as "Umm Ali".....
Preparation Time : 20 mins
Baking Time : 20 mins
Serves : 6 - 8

Ingredients:
Puff Pastry
5
Milk
½ l
Puck Cream
1 tin
Condensed Milk
1 tin
Pistachios
15
Cashews
15
Almonds
15
Raisins
15
Cinnamon Powder
1 tsp
Desiccated Coconut
¼ cup
Butter
½ cup

Method:
1. Preheat the oven for 10 mins at 200⁰C.
2. Now bake the puff pastry for 20 mins at 180⁰C until puffed and crispy.
3. Mean while, combine milk,puck cream,condensed milk,butter and cinnamon powder in a vessel and bring it to boil.
4. Once both are done. Grease a pan and layer the puff and pour the milk mixture above it.
5. Throw the nuts and desiccated coconut above that.
6. Bake this for 20 - 25 mins at 180⁰C.
7. U can serve it warm or cold, it tastes delicious either ways :) :)

Unnakkai.......!!!

Another Malabar snack... This is a quite famous snack now a days.... Not just in Malabar almost everywhere in Kerala u can find this..... Mainly for Ramadan......
Ingredients:
Plantains ripe
1 kg
Coconut grated
1/2 cup
Eggs
1
Sugar
1/2 cup
Cardamom Powder
2 tsp
Cashews
10
Raisins
10

Method:
1. Steam cook the plantains until soft.
2. Once its cooled grind them into fine paste.
3. Now prepare the filling. Heat ghee in a pan.
4. Beat the egg with 1 tbsp sugar and 1 tsp cardamom powder.
5. Scramble this in ghee. 
6. Add the grated coconut, sugar,cardamom powder and fry till light brown.
7. Add chopped cashews and raisins and mix well. Off the flame. Filling ready.
8. Now make small balls out of plantain and flatten them in your palm.
9. Fill the plantain with the prepared filling.
10. Fold to make the desired shape.
11. Fry them in oil until brown.
12. Unnakkai ready....!!! :) :)
