Its been a little gap.. Got busy with family and stuffs... Again back with every ones all time fav.... Muffins!!!!! I have made chocolate and vanilla muffins here, made out of the same batter with only a single difference of adding cocoa powder. So while you are baking follow the instructions same as below if trying both at the same time or else omit the cocoa portion if only vanilla and if its chocolate alone then vice versa.
Preparation Time : 10 - 15 mins
Baking Time : 20 - 25 mins
Serves : 10
Ingredients:
Method:
1. Sieve the flour, baking powder and baking soda together for at least 2 times.
2. In a bowl beat the butter and powdered sugar until smooth.
3. Add eggs one by one and beat well until creamy.
4. Add vanilla essence to this.
5. Now slowly add in the flour little by little and mix with a spatula and if you find the batter too thick you can add little of milk to this. Be careful that the batter should not be too thin or loose as well.
6. If you are baking chocolate and vanilla then separate this batter in to equal halves.
7. In one half you may add 2 tbsp of cocoa powder and combine well.
8. Now preheat the oven for 15 mins at 180⁰C.
9. Now keep the muffin liners in the muffin tray and fill 3/4 of the cup with batter.
10. Bake this for 20 - 25 mins or until done at 180⁰C.
11. You can check the muffins in time to time by pricking a toothpick in to it. When it comes out clean the muffins are done.
12. Cool them on the wire rack and serve..... :)
