Egg Puffs.....!!!

Usually we buy puffs from bakeries. But have you ever tried it at home?? If not do try!! It tastes awesome and requires less time for cooking too! 



Preparation Time : 15 mins 
Baking Time : 20 - 30 mins
Serves : 10

Ingredients:
Egg
6
Puff Pastry sheets
10
Onions
3
Ginger (chopped)
1 tbsp
Garlic (chopped)
1 tbsp
Kashmiri Chilly Powder
1 tsp
Pepper Powder
1 tsp
Garam Masala
½ tsp
Turmeric Powder
½ tsp
Tomato Ketchup
1 - 2 tbsp
Curry Leaves

Salt 

Oil


Method:
1. Boil 5 eggs completely and keep aside.
2. Preheat the oven for 10 mins at 180⁰C.
3. Mean while, heat oil in a pan and add sliced onion, chopped ginger and garlic and curry leaves and salt.


4. Saute this until the onion turns golden brown.
5. Now add kashmiri chilly powder, turmeric powder, pepper powder and garam masala and saute well until the raw smell goes off. 
6. Add tomato ketchup into this and mix and off the flame.
7. Now layer the baking tin with parchment paper.
8. Beat one egg in a small bowl.
9. Now in each pastry keep 1 tbsp of masala and half of one boiled egg and fold it.
10. Above this brush the beaten egg.
11. Continue this until the pastries are over.
12. Bake this in the middle rack for 20 - 30 mins until golden brown as in the picture. Tasty home made puffs ready :) :)

Vanilla/Chocolate Muffins....!!!!

Its been a little gap.. Got busy with family and stuffs... Again back with every ones all time fav.... Muffins!!!!! I have made chocolate and vanilla muffins here, made out of the same batter with only a single difference of adding cocoa powder. So while you are baking follow the instructions same as below if trying both at the same time or else omit the cocoa portion if only vanilla and if its chocolate alone then vice versa. 
Preparation Time : 10 - 15 mins
Baking Time : 20 - 25 mins
Serves : 10

Ingredients:
All purpose flour
2 cups
Powdered Sugar
1 ½ cups
Baking powder
1 tsp
Baking Soda
1 tsp
Eggs
2
Vanilla Essence
1 tsp
Cocoa powder (for chocolate muffins)
2 tbsp
Butter at room temperature
1 cup
             
 Method:
1. Sieve the flour, baking powder and baking soda together for at least 2 times.
2. In a bowl beat the butter and powdered sugar until smooth.
3. Add eggs one by one and beat well until creamy.
4. Add vanilla essence to this.
5. Now slowly add in the flour little by little and mix with a spatula and if you find the batter too thick you can add little of milk to this. Be careful that the batter should not be too thin or loose as well.
6. If you are baking chocolate and vanilla then separate this batter in to equal halves.
7. In one half you may add 2 tbsp of cocoa powder and combine well.
8. Now preheat the oven for 15 mins at 180⁰C.
9. Now keep the muffin liners in the muffin tray and fill 3/4 of the cup with batter.
10. Bake this for 20 - 25 mins or until done at 180⁰C.
11. You can check the muffins in time to time by pricking a toothpick in to it. When it comes out clean the muffins are done.
12. Cool them on the wire rack and serve..... :)

Prawns Roast - Kerala Style...!!!

Yet another prawns recipe :D This is a semi gravy roast. Not too dry not too much of gravy....
Preparation Time : 10 mins
Cooking Time : 15 mins
Serves : 3 - 4

Ingredients:
Prawns
500gms
Onion (chopped)
Ginger  (Julian sliced)
1 pc
Garlic (Julian sliced)
5 cloves
Green chilly
2
Tomato
1
Red Chilly Powder
1 tsp
Coriander Powder
1 tsp
Turmeric Powder
½ tsp
Pepper Powder
1 tsp
Cumin Powder
½ tsp
Coconut Milk
¾ cup
Gamboge (kudampuli)
1 pc
Coriander Leaves

Curry Leaves

Salt

Oil

Method:
1. Clean the prawns and keep aside.
2. Heat coconut oil in a pan and add ginger and garlic and saute slightly.
3. Now add slit green chilies into this and saute again.
4. Add chopped onions and salt and saute until golden brown.
5. Now add chopped tomato and saute until cooked.
6. At this stage add turmeric powder, coriander powder, red chilly powder, cumin powder, pepper powder and saute until the raw smell goes off.
7. Once the powders are done, add 1 cup coconut milk into this.
8. When this starts to boil, add prawns and gamboge and cook until the prawns are completely done.
9. Once the prawns are done and there is still more gravy left, increase the flame and keep stirring until it reaches the desired consistency.
10. Off the flame and add some curry leaves and coriander leaves and pour a tsp of coconut oil. Serve hot with chapattis or appam....!!!

Irachi Choru / Chicken Rice......!!!

Yet another traditional recipe.... This is similar to biriyani but tastes entirely different. We dont add much of masalas in to this as of biriyani.... This is very light but can fill your mind n tummy :) :)
Preparation Time : 10 mins
Cooking Time : 20 mins
Serves : 3

Ingredients : 
Basmati Rice
2 cups
Chicken
¾ kg
Onions
4
Ginger
1 pc (crushed)
Garlic
5clove(crushed)
Green Chilly
5 (crushed)
Tomato
1
Turmeric Powder
½ tsp
Coriander Powder
1 tsp
Red Chilly Powder
1 tsp
Cardamom
8
Cloves
8
Cinnamon
2 sticks
Bay leaf
1
Water
3 cups
Lime
1 tsp
Salt

Oil

Ghee

Method:
1. Wash and drain the rice and keep aside. 
2. Heat ghee in a bottom thick vessel and sputter 4 cardamoms, 4 cloves, 1 cinnamon stick and bay leaf.
3. Now add half of an onion sliced and salt in to this and saute.
4. Add the rice into this and fry well. The color shouldnt change.
5. Now add 3 cups of water and cover and cook until done.
6. In another pan heat oil and sputter rest of cardamom, cloves and cinnamon stick.
7. Add the onions sliced into this and saute until golden brown. 
8. Now add the crushed ginger, garlic and green chilies into this and saute until the raw smell goes off.
9. Then add turmeric powder, coriander powder and red chilly powder and mix well.
10. Once this is done, add the sliced tomatoes and saute until soft.
11. Add one tsp of lime into this.
12. Now add the cleaned chicken pieces into this and combine well. Close and cook until the chicken is completely done and the whole water has drained.
13. Now add the masala in to the cooked rice and mix slowly and carefully without smashing the rice.
14. Serve hot with raita and pappad :) :)

Cashewnut Balls....!!!!

Its a traditional Kerala snack!! I remember in my childhood when we used to visit our grandma for vacations, she used to prepare this for us..... That taste is still hmmmm yummyyyy......
Preparation Time : 10 - 15 mins
Serves : 10

Ingredients:
Cashew nuts
1 cup
Rice
½ cup
Grated Jaggery
½ cup
Grated Coconut
1 cup
Cardamom Powder
1 tsp
Method:
1. Dry roast the rice until crispy and golden brown.
2. Then roast the cashew nuts until golden brown.
3. Now powder the rice and cashews.
4. In a bowl add the powdered cashews, rice, grated jaggery and coconut.
5. Add cardamom powder into this.
6. Mix well and make small balls out of this.
7. Enjoy the cashew balls!!!! :)

Tropical Freeze....!!!!

An awesome, easy, yummy pudding to surprise your guests!!!! It has a perfect blend of coconut and cream...!!!
Preparation Time : 10 mins
Serves : 10

Ingredients :
Puck Cream
2 tin
Condensed Milk
1 tin
Thick coconut milk
3 cups
Gelatin
10 gm
Water
¼ cup
Red Food color
3 - 4 drops
Pistachios, Almond
a handful
Digestive biscuits
2 - 3


Method:
1. Soak gelatin in 1/4 cup of water and keep aside.
2. In a bowl mix condensed milk and puck cream with a whisk and combine well.
3. Add 3 cups of thick coconut milk into this and mix well.
4. Add 3 - 4 drops of red food color and combine again.
5. Now double boil the gelatin and pour to the cream mixture.
6. Refrigerate for 4 - 5 hours or until set.
7. Powder the nuts and biscuit and throw above the pudding while serving.
8. Serve Chilled :)

Ulli Vada / Onion Fritters.......!!!

One of the easiest evening snack!!! 
Preparation Time : 5 mins
Cooking Time : 5 mins
Serves : 4

Ingredients :
Onions
4
Ginger
1 pc
Garlic
4 cloves
Green chilly
2 - 3
Besan flour
1 cup
Hing powder
1 pinch
Turmeric powder
½ tsp
Coriander leaves 

Curry leaves

Water

Salt

Oil


Method:
1. In a bowl add sliced onions, chopped ginger, garlic and green chilly and mix well with hands.
2. Now add salt, chopped coriander and curry leaves, hing powder and besan little by little and turmeric powder. (as shown in the pic)
3. Combine this well and add water and keep mixing with hand.
4. The onions should not be too watery or too dry. It must be in between.
5. Now heat oil in a pan and take little from the mixture and drop and fry till golden brown.
6. You can make them into balls or of any desired shape and fry.
7. Ulli vada ready :)

Egg Burji.....!!!

Yet another easy recipe for dinner!! Usually when we think of making something with egg we end up in roast or curry.. This is a different one for those who are awaiting for a simple but yummy egg dish!! Here you go...!!
Preparation Time : 10 mins
Cooking Time : 10 mins
Serves : 4

Ingredients:
Eggs

Onion
Tomato

Green Chilly

Coriander leaves

Oil

(Ingredients for crushed masala)
Chilly Powder
1½ tsp
Coriander Powder
1½ tsp
Turmeric Powder
½ tsp
Jeera powder
¼ tsp
Garlic
3 cloves
Onion
1
Pepper balls
½ tsp
Grated coconut
1 cup
Garam masala
1½ tsp

Method:
1. In a grinder, mix all the ingredients for crushed masala and add 1/2 cup of water and grind into a fine paste and keep aside.
2.Heat oil in a pan and saute chopped onion and green chilies.
3. Now add tomato in to this and saute well.
4. Now add the beaten eggs in to this and the masala paste and salt.
5. Keep stirring this until the oil clears and you find the egg as in the photo.
6. Once done, add chopped coriander leaves and curry leaves and serve hot :)

Fish Masala......!!!!

This time its another seafood other than prawns ;) This is an easy one which goes well with chapattis, nan, kulcha or even khubus or bread!! I have used Sultan Basi fish here, u can use king fish or any other of your wish.... But this really indeed is sooooooo yummy!!!!!!

Preparation Time : 15 mins
Cooking Time : 15 mins
Serves : 2

Ingredients:
Sultan Basi
2 big
Onions
2
Ginger Garlic Paste
1 tbsp
Ginger
1 pc
Garlic
4 cloves
Green chilly
3
Tomato
1 big
Lemon
1
Turmeric Powder
1 tsp
Coriander powder
2 tsp
Kashmiri Chilly powder
2 tsp
Pepper Powder
1 tsp
Jeera powder
1 tsp
Jeera seeds
1 tsp
Coriander leaves

Curry Leaves

Salt

Oil

Method:
1. Marinate the fish with ginger garlic paste, 1 tsp lemon juice, 1/2 tsp turmeric powder, 1 tsp coriander powder, 1 tsp kashmiri chilly powder and salt and keep for 10 mins.
2. After 10 mins fry this fish until golden brown and keep aside.
3. Now drain and excess oil and in the same oil sputter jeera seeds.
4. Add chopped ginger and garlic and saute well.
5. Add sliced onion, salt and green chilies in to this and saute well until the onions are soft.
6. Now add rest of turmeric powder, coriander powder, chilly powder, pepper powder and jeera powder and mix well.
7. Once the spices are done, add tomato and saute until soft.
8. Now carefully place the fried fish one by one and put the masala over the fish. You dont have to stir it because it can break the fish.
9. Close and cook for 5 mins.
10. Add chopped coriander and curry leaves above it. Fish Masala ready :) :)

Chana Masala.....!!!!

One of my all time fav! Chana Masala!!!
Preparation Time : 10 - 15 mins
Cooking Time : 15 mins
Serves : 2 - 3

Ingredients:
Chana (White chick pea)
1 cup
Onion
2
Ginger
1 pc
Garlic
5 cloves
Green chilly
2
Tomato
1
Cardamom
3
Cloves
3
Cinnamon stick
1 small pc
Bay leaf
1
Cumin seeds
1 tsp
Kashmiri Chilly powder
1 tsp
Turmeric powder
1/2 tsp
Coriander powder
1 tsp
Garam masala
1 tsp
Salt

Oil

Method:
1. Pressure cook the chick pea with enough water and salt and keep aside.
2. Make a paste of kashmiri chilly powder, turmeric powder, coriander powerder, garam masala with little water and keep aside.
2. Heat oil in a pan and sputter cinnamon, cardamom, cloves, bay leaf and cumin seeds.
3. Add slices onions in to this and add required salt and saute well.
4. Once onions are done, add ginger, garlic and green chilly and saute again.
5. Add tomato into this and mix well until soft.
6. Once this is done, add the prepared paste into this.
8. Saute this until the raw smell goes off.
9. Now add the cooked chana into this and mix well.
10. Close and cook until the gravy thickens and reaches the desired consistency.
11. Off the flame and add freshly chopped onions and coriander leaves.
12. Serve hot with chapattis :) :)

Spicy Tuna Pasta....!!!

Hey all... after a short break am back with the bang...!! Had a great Eid with family and so had a break from my kitchen too.... Now back to the routine.... So here comes the recipes again....
Preparation Time : 10 mins
Cooking Time : 10 mins
Serves : 2

Ingredients:
Pasta
1½ cup
Tuna
2 tins
Onions
2
Ginger chopped
1 tbsp.
Garlice chopped
1 tbsp.
Green chilies chopped
2
Tomato
1
Soy sauce
1 tsp
Tomato Ketchup
1 tbsp.
Chilly sauce
½ tsp
Turmeric powder
½ tsp
Garam masala
1 tsp
Salt

Oil

Method:
1. Cook the pasta with water, oil and salt and keep aside.
2. Heat oil in a pan and saute onions well.
3. Add chopped ginger, garlic and green chilies to this and saute again.
4. Now add turmeric powder,garam masala, tomato ketchup, soy sauce and chilly sauce and mix well.
5. Once the raw smell goes off add tomato and saute until soft.
6. Once the masala is ready add the tuna into this and mix.
7. Close and cook for about 5 mins.
8. Now add the cooked pasta into this and combine well.
9. Close and cook for another 5 mins.
10. Off the flame... Spicy Tuna Pasta ready!!!  Serve hot :)
