Boondhi Laddoo.....!!

So here i start my journey of posting the recipes... Since its an inaugural recipe i thought i'll start with a dessert.... Laddoos are most of our favorite sweet i guess... Especially Indians... We being abroad the only thing that we ask to send from India are those delicious Laddoos..... But actually speaking we can easily cook this delicious sweet at home... Just need a little of patience... In cooking obviously that's NOT A BIG DEAL!! ;) So yea... Lecture bandh.... Recipe shuru... Here comes the recipe.....



Preparation Time : 15 - 20 Minutes (approx)
Cooking Time : 25 Minutes
Makes : 24 pcs


Ingredients:
    Besan Flour                     
     1 cup
    Cooking soda                  
     1 pinch
    Salt                          
     1 pinch
    Water
      ¾ - 1 cup(for batter)
    Sugar                      
      1 – ½ cup
    Water
      1 – ¼ cup(for syrup)
    Cardamom Powdered
      1 tsp
    Yellow food color(optional)
      1 drop
    Cashews                              
      10
Raisins
      15
Sugar Candy
      15

Method:
  1. Heat a pan and add 2 tbsp of ghee and fry the cashews and raisins until golden brown.
  2. Sieve the besan flour with cooking soda and salt.
  3. Add water little by little and keep mixing with a whisk to avoid formation of lumps in the batter and until you get the right consistency.
  4. The batter should not be too thick or too thin.
  5. Now heat old in a pan to deep fry the boondhis.
  6. Try to drop the batter with the tip of a spoon to check whether the boodhis are forming a round shape. If they form tails then your consistency isn't right!
  7. Now you may need 2 ladles. One for pouring the batter and another for draining the boondhis from oil.
  8. Start pouring the batter through the big ladle to the oil and fry those boondhis until done. They should not turn crispy. Clean the ladle used for dropping boondhis after each use. 
  9. Meanwhile on the other stove heat a pan add 1 & 1/2 cup sugar and 1 - 1/4 cup of water(water for the sugar to immerse)
  10. Boil the syrup until one string consistency, add cardamom powder at this stage and off the flame.
  11. Now, when the boondhis are done drain them from oil and place them in tissue paper for few minutes.
  12. Then add the boondhis,cashews,raisins,sugar candies to sugar syrup and mix all together.
  13. Start making balls when its warm enough to handle.
  14. Enjoy your Laddoos..............!!! :)


Tips & Tricks!!
  • Hold the laddle high enough from the pan to avoid tails
  • The one string consistency can be checked by  swiping the syrup between your forefinger and thumb
  • Don't let the boondhis cool in the sugar syrup, start making the balls when its warm else the sugar will crystallize which will make it difficult to shape them.
