Chicken Momos / Chicken Dumplings....!!!

Chicken momos is one of famous nepali dish.... This is considered as an appetizer or can even be had for a light dinner ;) Its soo yummy and it tastes awesome with the red chilly chutney which is its authentic combination...!! 
Preparation Time : 20 mins
Cooking Time : 40 mins (including chutney)
Serves : 4

Ingredients:


For Filling:

Chicken mince
250 gm
Onion
1
Cabbage
¼ cup
Carrot
1
Ginger
1 pc
Garlic
4 cloves
Coriander leaves
1 bunch
Garam masala
1 tsp
Vinegar
1 tsp
Pepper powder
1 tsp
Soy sauce
1 tbsp
Butter
2 tbsp
Egg
1
Salt

For Dough:

All-purpose flour
350 gm
Water

Salt    

For Chutney:

Tomato
2
Red chillies
6
Sugar
1 tsp
Water
1 cup
Salt                                   


Method:

Momos:
1. Prepare the dough first by mixing flour, water and salt.
2. Cover it with a wet cloth for 10 mins.
3. Chop nicely spring onions,onion,cabbage,carrot,coriander leaves,garlic and ginger.
4. In a bowl mix all the ingredients for the filling and keep aside.
5. Now take out very small balls from the dough and roll out like for puri but even small than that and very thin as well.
6. Now keep 1 tbsp filling in it and close the way you like.
7. Finish the whole filling this way.
8. Steam this for about 15 - 20 mins or until done.

Chutney:
1. Put tomatoes and red chilies in a pan and add water.
2. Cover and cook and bring to boil.
3. Remove the cover and boil for another 10 mins.
4. Red chilies must be soft and tomatoes must be easy to peel.
5. Once done drain off the water and let it cool.
6. Peel the tomatoes. Now transfer the tomatoes and red chilies in to a grinder. Grind it to a paste along with salt and sugar.
7. Enjoy your momos with spicy chutney :) :)

Carrot Cake......!!!!!

Heya all... Here is yet another cake recipe.... This is again another one of my fav cake! This can be had as it is of can be served with frosting as well.... A good cake to go with an evening tea...! 

Preparation Time : 20 mins
Baking Time : 25 - 30 mins
Serves : 10

Ingredients:
Carrot (finely grated)
2 1/2 cup
All-purpose flour
2 cup
Baking powder
1 1/2 tsp
Baking soda
1 tsp
Granulated white sugar
1 1/2 cup
Eggs
4
Oil
1 cup
Ground cinnamon
1 1/2 tsp
Vanilla essence
2 tsp
Almonds, pistachios (ground)
1 cup       
Salt
a pinch                             
Whipping powder
2 sachets
Cold milk
1/2 cup
Color ( green, orange)                       

 Method :
Cake:
1. Preheat the oven at 180 C for 10 mins.
2. Sift the flour, baking powder,baking soda,salt and ground cinnamon together.
3. Peel and grate the carrots.
4. In an electric mixer beat eggs until frothy. Gradually add the sugar and beat until pale in color.
5. Add oil in a steady stream and also add vanilla essence in to it. 
6. Now add the flour mixture slowly and fold in to the batter until incorporated. Don't overdo.
7. Now pour this into a big pan or into 2 small pans equally.
8. Bake this for 25 - 30 or until a toothpick inserted in the middle comes out clean. Let it cool.
 Frosting:
1. In an electric mixer with whisk attachment add 2 sachets of whipping powder and 1/2 cup of cold milk and beat until fluffy. 
2. Now cover the cake with this.
3. Add the desired colors and decorate as you like..
4. Refrigerate for around an hour. Enjoy the cake :) :)

Bread Rolls......!!!

Chicken rolls are usually made with the pastry sheets or even with the dough made from maida. But here i have used bread to form the outer covering. The method is very easy just have to be careful while filling the chicken and closing the rolls.
Preparation Time : 30 mins
Cooking Time : 15 mins
Serves : 4

Ingredients: 

Bread
8 slices
Chicken breast
300 gms
Onion
1
Ginger garlic paste
1 tbsp
Green chilly
2
Tomato
1
Turmeric powder
½ tsp
Chilly powder
1 tsp
Pepper powder
1 tsp
Garam masala powder
½ tsp
Bread crumbs
2 cups
Eggs
1
Maida

Water

Oil

Salt

Method :

1. Cook the chicken breast with salt and pepper powder and keep aside.
2. Shred the cooked chicken.
3. Now heat oil in a pan and add chopped onion and saute well.
4. Once done, add ginger garlic paste and green chilly and saute again. 
5. Add turmeric powder, chilly powder and garam masala into it.
6. Once the raw smell goes off add chopped tomato and saute until well done.
7. Now add the shredded chicken and mix well. Off the flame and keep aside,
8. Now slice away the sides of the bread.
9. In a plate add around 4 tbsp of water and press one slice of bread in to it. If u feel the water is less add little more.
10. Pick it up and press between your hand to remove excess water. 
11. Now in this slice keep some filling and roll it. Close the sides with maida paste. (mix maida and water to form a paste).
12. Now dip this in beaten egg and roll in to the bread crumbs. 
13. Repeat the same with rest of the slices until you finish the filling.
14. Heat oil in a pan good enough to deep fry the rolls.
15. Enjoy hot bread rolls with tomato ketchup or any other sauce :) :)

Zebra Cake...!!!!

A beautiful cake when cut into pieces with the chocolate and vanilla stripes.... This is indeed a normal cake but made in a different way. That is pouring the batter into the pan makes it different. There lies its perfection.
Preparation Time : 15 mins
Baking Time : 30 mins
Serves : 10 - 12

Ingredients:

All-purpose flour
2 cups
Powdered sugar
1 ¾ cups
Baking powder
2 tsp
Eggs
3
Cocoa powder
2 tbsp.
Oil
1 cup
Vanilla essence
1 tsp
Milk
1 cup
 Method:

1. Preheat the oven at 190⁰C for 10 mins.
2. Sift the flour and baking powder to avoid lumps.
3. In an electric stand mixer or with hand mixer beat together eggs and sugar until creamy.
4. Once done add oil and milk and beat until incorporated.
5. Now add the flour and baking powder mix in to this and mix using a spatula. Don't over mix.
6. Divide the batter into equal halves. 
7. Keep one half as it is and into the other half add the cocoa powder and mix well.
8. Now in a round pan with parchment paper or greased, pour 2 tbsp of plain batter in the middle.
9. Now pour 3 tbsp of chocolate batter right through the middle of the plain batter.(Refer the picture above. Once completed it might look like this)
10. Continue this until the batter is over.
11. Bake this for about 25 - 30 mins or until a toothpick inserted at the center comes out clean.
