Meringue Cookies.....!!!

Here comes the beautiful sugary cookies....! Easiest cookie to make and lovely they taste.... With just 3 ingredients they give an awesome outcome!!
Preparation Time  : 20 mins
Baking Time : 45 mins 
Makes : 25 - 30 pcs

Ingredients:

Egg whites
3
Powdered sugar
1 cup
Vanilla Essence
1 tsp
Food Color (Green)
½ tsp(optional)

Method:

1. Preheat your oven for 15 mins at 100 C.
2. In a stand mixer beat the egg whites until foamy.
3. Now slowly add the powdered sugar and beat until they form shiny an stiff peaks.
4. Now add vanilla essence and if required food color as well.
5. Beat until incorporated.
6. Now transfer this into a piping bag attached with star tip and pipe into desired shape.
7. Bake this for about 45 mins or until done.
8. Open the oven door a little and cool them in there for few hours... Enjoy your crispy chewy meringues :) :)
Note:
  • Cooking time may differ as per the oven.
  • Let them cool completely else they might be really sticky.

Semiya Payasam....!!!

Semiya Payasam or known as Kheer which is made by vermicelli, milk and condensed milk is one of our famous dessert.... Usually we make this for occasions with a sadhya or after a heavy biriyani.... But now a days since this is an easy thing to prepare most of us make it whenever we like to....
Preparation Time: 5 mins
Cooking Time : 20 mins
Serves : 4

Ingredients:

Roasted Vermicelli
½ pack
Milk
½ L
Nestle Condensed milk
1 tin
Cardamom powder
2 tsp
Cashew nuts and raisins
¼ cup
Method:

1. In a bottom thick vessel, bring the milk to boil.
2. Once it starts boiling add the condensed milk little by little and keep on stirring.
3. Now add the roasted vermicelli in to this and keep stirring until it boils and the vermicelli gets cooked.
4. Add the cardamom powder in to this.
5. Once the misture starts to thicken you can off the flame.
6. If you like you can saute the cashews and raisins in 2 tbsp of ghee and add above this.
7. Serve hot :) :)

Mysore Pak.....!!!!!

Mysore was first prepared in the kitchens of the Mysore Palace by a palace cook named Kakaasura Madappa. The cook at the Mysore Palace kitchen simply made a concoction of gram flour, ghee ans sugar. When asked the name, Madappa obviously didn't have its name in mind, so he simply called it the "Mysore Pak"/ Pak(or paka, more precisely) in Sanskrit and other Indian vernaculars, means sweet. It is traditionally served in weddings and other festivals of Southern India. It is very popular in baby showers too..

Though I am not a big fan of this sweet, I still like making it. Trying new desserts beyond my knowledge :) :)
Preparation Time : 5 mins
Cooking Time : 30 mins
Makes : 20 pcs

Ingredients:
Gram flour (Besan flour)
1/2 cup
Ghee
1 cup
Sugar
1 1/2 cup
Water
1 cup
Sugar for sprinkling

Method:

1. Sift the flour to get rid of the lumps. Keep a greased tray ready to pour the batter.
2. Keep a bottom thick pan on stove on medium flame.
3. Add 1 1/2 cup of sugar and 1 cup of water in to it, boil and bring to one string consistency.
4. At this point carefully add the gram flour and keep stirring with a wire whisk.
5. Mix it until smooth. Now slowly start adding ghee by 1-2 tbsp at a time and do it until you finish the whole ghee.
6. At one stage, the color starts to pale and the mix will turn frothy. Keep stirring until the whole mixture is frothy.
7. At this stage quickly off the flame and pout the mix into the greased tray and smoothen the upper layer.
8. Wait until its warm enough to demould it and cut into the desired shape. Sprinkle some sugar above it. Cool it down and serve :) :)

Avial.....!!!

Hi all.... I know its been a quite long time now.... Got really busy with house,friends and family.... So its yet another year here..... Lets all pray that may it be more better than last year and may we all have a blessed year ahead..... 

Now here is another famous south Indian side dish.... This is my all time favorite.. I love it the way my mom cooks this for me... I would eat a lot of rice just with this... Its easy to make tasty to eat and really healthy as well....
Preparation Time : 5 mins
Cooking Time : 20 mins
Serves : 3

Ingredients:

Assorted veggies
3 cups
Grated coconut
½ cup
Green chilly
2
Jeera
a pinch
Water
1 tbsp
Yogurt
¼ cup
Turmeric powder
½ tsp
Green Mango
2 slices
Coconut oil

Salt

Curry leaves

Method:

1. Cook the veggies with turmeric powder, enough water,green mango and salt.
2. Meanwhile, grind grated coconut,jeera, green chilly, and 1 tsbp of water together in a grinder to a thick paste.
3. Once the veggies are almost done, add the ground paste and mix and cover and cook for 5 mins.
4. Now add yogurt into this and mix and cook for another 2 mins.
5. Off the flame and add 1 tbsp of coconut oil and curry leaves. 
6. Serve hot with steamed rice :) :)

Note:
  • You can add any veggies as per your taste. I used carrot,drum stick, ash gourd, snake gourd, ivy gourd and raw plantain.
